Product Profile

Alkaline protease is produced by liquid deeply fermented and extract refined by Bacillus subtilis, it has advantages of efficient, clean and others. The enzyme is widely used in leather tanning process, animal feed, bakery, condiments, beer, soy sauce and other industries under alkaline conditions.

Product features

1.  Temperature range: effective temperature range 25-55℃, the optimum temperature 43-50℃.

2.  pH value range: effective pH range 9-11,

3.  Effects of metal ions on enzyme activity: metal ions Ca²⁺、Mg²⁺、Fe²⁺ have active effects on enzyme, Mn²⁺、Cu²⁺、Ag²⁺ and EDTA inhibit enzyme activity.

4.  Product specification: liquid and powder.  

5.  Enzyme activity 30,000 u/ml, 50,000 u/ml.

Application

1. In leather processing industry, alkaline protease is used to remove hair and soften, In remove hair, dosage is 3-6kg/t material, soften dosage 0.15-0.3kg/t material, enzyme activity calculated in 50,000u/g, same below.

2. Add alkaline protease into animal feed compound enzyme, can improve protein utilization, reduce feed cost, the enzyme dosage is generally 0.02-0.10kg/t complete feed.

3. In bakery industry, the enzyme can weaken dough strength, impact dough excellent plasticity and extensibility after using the enzyme, production of biscuits section structured, loose and cool crisp, enzyme dosage 0.1-0.3kg/t flour, add when knead dough.

4. In the production of animal and plants protein hydrolyzate powder condiments or animal origin extract, the enzyme have advantages of high speed on hydrolysis, soft flavor etc, dosage 1-3kg/t raw material, hydrolysis 2-24 hours under the optimum conditions.

5. In the brewing process of beer, wine, soy sauce, add this enzyme can clarify the fermentation broth and product, eliminate cold muddy. Dosage is 0.2-1.0kg/t dry.

6. In cheese production, the enzyme can quicken maturity without influence cheese flavor and quality. Alkaline protease dosage is 0.02-0.10kg/t raw material.

Packing & Storage

1. Liquid product package is plastic drum, 25/30kg per drum; solid enzyme is woven bag package, 25kg/bag.

2. The enzyme is bioactivator material, high temperature, strong acid, and strong alkali can cause enzyme lose activity. During enzyme transportation and storage, liquid enzyme should be avoid sunlight, solid enzyme must avoid sunlight and rain, warehouse should be kept clean, cool and dry.
